Guessing----: --but probably have been sleeping with your mouth open (?Snorer? / ?Allergy issues? / nasal congestion?), and dried out your tongue and back of throat. If drink of water makes feeling disappear, even more likely. Could consider making sure can breathe through nose at bed time, and/or vaporizer by bedside.

Mouth Breather?: There is a chance that you are a mouth breather, meaning, during the night, you breath out of your mouth instead of your nose. If that is the case (not enough information), you should see an ENT to see if there is an upper airway obstruction.
