is it possible for histamine to manifest itself only in the digestive system - ie have a histamine-driven high stomach acid but not have other symptom?

Possible: HIstamine level may only be elevated in one organ and not another and thus the answer is yes. Having said that, you will need to find out the cause for the high acid production since histamine is just one of the players causing acid production.
