If one has infected adenoids, wouldn't the blood work show an elevated white count?

No: Serious systemic bacterial infections often cause elevated neutrophils in the blood, but this is unusual in mild local infections. "Infected adenoids" is usually a minor, poorly-understood surface infection that we blame on a virus. Blood work is usually unaffected.
