Unusual: It is unusual to develop an allergy to carrots at this stage. A more important question is what you are cooking the carrots in or with. That may be the cause rather than the carrots check your seasoning. If no answer, consult an allergist.

Yes: A sensitivity and/or allergy can indeed develop at any time. It is not unusual for a person to take an antibiotic several times and not have a reaction, and then all of a sudden they do. While this is not as common with food allergies, it can happen.You may want to be double sure it's not an additive - are these fresh carrots not done anything to except cook in water, or canned with preservatives?
