May be hypoglycemia: The symptoms you describe can occur from low blood sugar. You are at increased risk for this problem if you are not eating enough calories/protein or if you are on meds for diabetes. Try to eat a protein-rich snack (milk, cheese, yogurt, lean meats) prior to bed to see if it helps. Symptoms could also be caused by low blood pressure or an irregular or fast/slow heart beat.
