Loss of Gum Tissue: When a tooth is extracted, the gum tissue is usually preserved. The exceptions could be if the gums are chronically or acutely infected or if some of the gum tissue is attached to the tooth and/or bone attached to the tooth when extracted. After a tooth is removed, the extraction site will undergo remodeling and may appear to shrink. No reason to keep biting on gauze for 3-5 days postop.

Yes and yes: When tooth removed bone/gums recede. An extracted tooth usually requires replacement to prevent collapse of the remaining dentition. Gauge should be used until bleeding stops, no longer. Please return to your Dentist to discuss these issues with him/her.
