For people who produce no hcl or digestive enzymes due to surgery etc etc, what med or intervention is used to digest food?

Depends: Digestion will normally occur even in the presence of antacid therapy. If there is a loss of pancreatic enzymes, then enzyme tablets can be given to take with meals. If there is loss of bile or gall bladder dysfunction, then reducing fat in the diet may also help aid digestion.
