See answer: A dry mouth can be due to one of several medical disorders that cause a reduction in saliva. It can also be a symptom of anxiety and stress. The most common medical condition Sjogren's syndrome which is an autoimmune condition. If you feel anxiety may be the cause go to my Checklist: Overcoming anxiety and stress. If it persists see your physician

Really, the most: likely explanation for this is anxiety, which you probably know. Talking on the phone is not that unusual a circumstance to cause anxiety...many people experience this (I kind of do!) You need the help of a therapist or counselor who can help you learn a different response through Cognitive Behavioral Therapy. Ask your doctor or someone you trust for a referral. You can be helped. Good wishes:)
