Could be normal: Bumps on the back of the throat could be part of the normal tonsils and posterior pharynx, however sometimes they can be associated with infection or growths. A physician would be able to tell you if these bumps are normal or need further treatment and workup.

Cobblestoning: This description sounds like cobblestoning which doctors refer to as lymphoid patches. This is a normal part of the immune system as are tonsils. Lymphoid patches can be prominent after a cold or simply due to post nasal drip. Not a worrisome sign. Additionally most people find all kinds of surprising things when they closely examine their throats for the first time.
