Very unlikely but...: Eating garlic-infused olive oil that is not refrigerated can cause botulism but this is extremely rare and the vast majority of the time will not be a problem. The fact that you only had a bite is also good as even if it contained some botulism toxin you would not have ingested much. If you develop worrisome symptoms go to the ER.
