Pasteurization: 1 out of 4 chickens are contaminated. When you cook them they are safe. But you don't want to handle raw chicken with bare hands and stick your finger in your mouth. You may also pasteurize food to kill off bacteria. Milk is Pasteurized by heating to 161°F for 15 seconds, or to 145° for 30 minutes. 130° for 45 minutes for eggs in the shell .
