Being lactose intolerant, can you get diarrhea 24 hours after ingesting dairy (cheese)? or could it be dehydration resulting from high temperatures?

Not likely: lactose is the milk sugar that is digested in the small intestine. This would be very slow transport through your digestive tract to take 24 hours. Diarrhea should have occurred sooner. Dehydration does not cause diarrhea.
