Second hand smoke : You are new at this mom business but your question reflects courage and desire to do what is best for your baby. Your mom's habits and needs are a real harm to her grandchild. Many studies have shown that second hand smoke is very harmful to infants. Airing out won't cut it. You're mom has given you the no win scenario. She didn't love you enough to stop for you maybe she will for your baby!

Hard road ahead: Presence of 2nd hand smoke doubles the kids risk of respiratory and ear infections & increases risk of crib death. Smokers are nose blind and cannot judge when the "smoke smell" is gone. I'd find a sitter and explain to your mom there will be no smokers around baby for now. It's a well known health risk..
