Million $ question: Yup, the question I get asked most. All food allergies are up, and in particular the top 8 (egg, cow's milk, wheat, soy, peanut, tree nut, fish and shellfish). Something about how we live as industrialized societies. Exposure is a big piece of the puzzle - how, what, when, where; contributing factors. No simple answer. Ex: dry roasting somehow increases peanut allergenicity.
