My throat has wrinkles under it from this choking feeling. it feels as someone has their hand wrapped around my neck.

Swallow study: You should have a proper swallow study done. The wrinkles in the skin of your neck have nothing to do with difficulty swallowing or a choking sensation as you describe it. Moving saliva and food from our mouth down to our stomachs requires lots of muscle coordination. If that coordination is off, you can get a sensation like you describe. See a speech and swallow specialist after discussing w/ pcp.
