Foods with fiber: Foods with lots of fiber have healthy carbs because the carbs are slowly digested so that they turn into sugars slowly, thus avoiding a sudden surge of sugar into one's bloodstream after eating. Choosing natural foods that are like vegetable and whole grains is helpful. Fruits have a lot of sugar. Whole grains that are overly processed (made soft and smooth) have lost some of their fiber benefit.

Non processed: The best carbs are those that are not too processed. Anything instant or made with "white" flour has already been broken down and you are getting "sugar" . Avoid high fructose corn syrup as well. Whole grain or wheat or carbs that need to be cooked alot are the best. Remember though, amounts ingested count as well.
