Yes: While food allergies are more common in children, they can occur in adults. Pollen allergies usually takes 3 pollen seasons for sensitization followed by symptoms. I saw an 80 yr old man with dust mite allergy with symptoms that developed at age 65 yrs. Elderly are less likely to develop allergies, but it happens. It's unclear why the immune system tips toward allergies--much research on this.
