Occlusal anatomy: Without actually being able to see what you are talking about we can't be sure. Some dentists incorporate more anatomy into their fillings than others. If you previously had a flat worn filling, and now it feels different, you may merely feel the difference in the beginning. Teeth with more anatomy are more efficient when chewing. Ask your dentist to look at it just to be sure.

Anatomy: Your dentist may have been re-creating the normal anatomy of the tooth. I would ask your dentist. Your dentist knows what was done.
