Salmonella- 5 to 72h: Good question. Referring to salmonella enterica and its many strains (serovars). It can take anywhere from 5 to 72 h to manifest symptoms since the bacteria needs to grow and reach a critical number to produce enough toxins to cause illness. For s. Typhi(cause of typhoid fever), the incubation period can be between 3 and 60 days, although most infections occur 7-14 days after contamination.

VARIABLE: Symptoms (violent vomiting) may show within the first few hours if food poisoning is toxin -mediated (e.g. Staph infection & eggs, b. Cereus infection & rice). Others like salmonella, campylobacter takes hours to days since it requries bacteria to grow before causing illness. Timing is variable since it depends on the pt's immunity, the inoculum size, and the virulence of the organism.

Toxins-min to hrs: Scombroid reaction can occur is minutes- symptoms include facial flushing and sweating, peppery taste about the mouth, dizziness, palpitations, nausea and ha. Ciguatera poisioning is caused by eating certain reef fish contaminated with dinoflagellates toxins. Gi (n, v, diarrhea) and neurological (numbness, dizziness, ataxia) symptoms occur a few hours after ingestion.
