Just do it!: If you are the predominant food preparer, find some fun cookbooks that incorporate fiber sources with meat products; buy leaner cuts of meat, and start introducing fruits, vegetables, and whole grains in forms your husband will consider eating. You can't force him to eat healthy, but you can certainly stop buying junk foods, cutting his portion sizes, and encourage him to make better choices.
