Wheat Allergy: A wheat allergy is an exaggerated immune response due to exposure to wheat protein. The reaction can present with typical symptoms of hives, respiratory symptoms (cough, wheeze, shortness of breath), GI symptoms (abdominal pain, vomiting), swelling, loss of consciousness, and can be fatal. Symptoms typically present within minutes to a couple hours after ingestion or contact.

Food allergy: Wheat may cause an allergic reaction. Baker's allergy is a reaction to inhaled wheat particles. Gluten sensitivity is a problem with wheat, barley and rye and is somewhat similar to a classic food allergy but the underlying immune mechanism is very different.
