Both do: Both ct and MRI can view the eustachian tube if the cuts or slices are made thin enough. Neither can assess the functional aspects of the tube, only determine whether it appears normal or has a growth or mass in it our touching it.

See below: Of the sources i consulted, ct of the temporal bones was the test used to image the eustachian tubes. Mri could also be used.
