Different for each: Iron is a metal and it is not altered by freezing. Folic acid may decrease 5% by freezing.

Freezing usually ok: Freezing generally the best way to preserve the nutritional content of foods. Fresh is best, freezing 2nd best. Iron should be very resistant to freezing, folate (folic acid) not as resistant.
