Yes.: Anyone can develop an allergy anytime to almost anything. Note that gluten enteropathy ( celiac disease ) and gluten allergy are separate entities.

It could happen anytime from birth on.It could be a simple allergic response like hives or a scary nasty one like those to bee stings. It can also trigger cross reactions that injure tissue, like celiac disease.
