Yes.: Anyone can develop an allergy anytime to almost anything. Note that gluten enteropathy ( celiac disease ) and gluten allergy are separate entities.

That's how it works: The same system that protects us from germs can decide something, like gluten, is an invader and mount various body defenses against it. It could happen anytime from birth on.It could be a simple allergic response like hives or a scary nasty one like those to bee stings. It can also trigger cross reactions that injure tissue, like celiac disease.
