The dextran capsule: Plaque mainly consists of streptococcus mutans--a bacteria that produces a sticky capsule made of polysaccharides (dextran) which sticks to the teeth and is the matrix of plaque. This bacteria then metabolizes carbohydrates into lactic acid. The Lactic Acid erodes the tooth enamel that it is stuck too and creates dental cavities.
