Great question.: In a small study performed years ago raw almonds were compared to roasted almonds and almond butter measuring their effect on lipids. All products were helpful with raw and roasted almonds besting the almond butter. With that said, while still healthy, roasting does increase the oxidation of fatty acids which is not considered a beneficial change. So raw almonds best, roasted good, butter okay.
