Many benefits: safflower oil appears to increase insulin sensitivity, decrease HbA1C, decrease C-reactive protein, lower fasting blood sugar and increase"good’ cholesterol. It should, if taken be balanced with additional consumption of omega 3 fatty acids Sunflower oil is also rich in omega 6 fatty acids and has similar effects to safflower oil. The normal diet is usually very rich in omega 6 fatty acids so supplementation is unnecessary. Better to take omega 3 fatty acids as they balance the omega 6: seafood, flaxseeds, walnuts and canola oil.
