No Real Evidence: Chitosan is made from chitin, which is a polysaccharide that is found in the exoskeletons of shrimp and other sea crustaceans. It is a soluble dietary fiber (similar to other soluble fibers) and in labs, has been shown to bind fat, which would prevent absorption of the fat. There are no credible dietary studies that support claims of being a fat blocker.
