Blood tests.: There are several tests done on the blood which can point to problems related to pancreas inflammation (amylase, lipase levels; for example).

Depends: Blood test will detect acute pancreatitis, but blood tests may be normal in some one with pancreatic cancer. What symptoms do you have? It would be prudent to consult a doctor so that the right tests my be done.
