How did the medieval times people deal with pest/rodent control?

Not much: Rodents and pests at those times were considered a part of normal living. There were no pesticides and limited means for cleanly storage. Cats were useful for rodents but that was all. Lifespan in that era was in the 30s and disease was the major killer. So the options were very limited.
