is it possible for anxiety and stress to cause stomach symptoms such as gas, bloating / fullness etc?

Absolutely: You have probably heard that it's possible for a person to worry so much that they develop an ulcer? It is true. Also, a person who is anxious may swallow a lot, including swallowing air, which can lead to belching.
