Celiac sprue: can you ever eat products that "may contain wheat"?

Exciting development: Alternatives to a gluten-free diet may soon be available--engineering gluten-free grains, decreasing intestinal permeability by blocking epithelial zonulin receptor on small bowel surface, inducing tolerance to ingested gluten with a vaccine, & degrading gliadin peptides using probiotics with endopeptidases or with transglutaminase inhibitors. Don't plan on it now: Future developments aside, that is never a good idea. Every time you consume gluten, even a tiny amount, your immune system goes into overdrive & makes antibodies that attack your intestinal tissue.Symptoms may take a while to appear or be immediate, but the gut injury you risk is always possible. The injury also sets you up for increased sensitivity to other foods/ additives, etc.Respect your gut!
