Celiac disease: If you are concerned about celiac disease, the usual diagnosis is by biopsy during an endoscope, so this is usually done by a stomach specialist. Talk to your primary care doctor about a referral to a gastroenterologist . If you are having significant problems with your stomach (gas, bloating, diarrhea, cramping, malabsorbtion) this may be the next step.

Discuss: I would suggest you to discuss it with your primary care doctor. Tell you complains and symptoms and let him/her to decide. In general, it should not be a problem.

S/he can start it: Initial screening is simple, using your history & exam to validate the need for blood tests. (insurers may not pay for tests unless the need is established)The initial blood tests narrow the group of people that have some symptoms down to those who are most likely to have it. Further confirmation by more invasive tests by a GI specialist may then bee needed. Your primary can coordinate this.

Ciliac: In addition to the other excellent advice given you, consider getting as food sensitivity test such as at Great Plains Laboratory in Kansas (can be done vial mail). Some folks don't have full-blown ciliac but are still sensitive and this test can tell that. Peace and good health.
