Variation: Be sure to get a good mix of fiber and protein with your veggies. It is easy to subsist on pizza and pasta and be "vegetarian", but not necessarily healthy. Tofu and legumes (beans, chickpeas) are great sources of protein. Also lentils and quinoa. These are all great options to add to salads and stir fries. Keep it varied and interesting and you will never miss the meat!
