A lot: There is no question that boring, repetitious tasks can affect attention and focus. Understimulation is probably as bad as overstimulation in terms of staying on task. As for slowed thinking, a boring task often requires little mental effort, so that may get diverted to other thoughts and activities, resulting in slow response if the task suddenly demands attention for some reason.
