Tearing up.: When you cut onions they release a chemical irritant (synpropanethial-S-oxide) which stimulates tear production from the lachrymal glands. It is tearing up - not crying.

Agree with Dr. F: You can reduce the eye irritation by keeping the onion and cutting under running water.
