Lacrimation: When you cut onions they release a chemical irritant (synpropanethial-S-oxide) which stimulates tear production from the lachrymal glands. It is tearing up - not crying. That are various food chopping products that chop very quickly and keep the onions contained so that the irritant is not free flowing.
