Usually 1-2 days: Focusing on the specific pathogens you mention (enteropathogenic E coli, shigellosis, salmonellosis, norovirus and other viruses), incubation typically is very short (a few hours to 4-5 days), median probably 24-36 hr. For some of these, it depends partly on dose of the infecting agent. Other fecal-oral infections, such as giardiasis and amebiasis, have incubation periods of a week or longer.
