Body mass index: It depends whether you are muscular and active, or "soft" and sedentary. But for a 21 yo male of average activity, you would need approximately 3000 calories (130 grams carbohydrate and 66 grams protein) each day, spread among 3 or more meals. If you eat 3 meals, each the same, that would be 45 g carb and 22 g protein for a 1000 cal dinner. Stay active! Eat healthy!

Vague: Much depends upon your activities throughout the day, your metabolism, and health/immune system. I would consult a local nutrition expert or a Dr. whom can base your caloric input on your health and body type
