Potassium 2.4 one yr. ago, corrected with diet. pot., kidney, blood tests normal since. will it stay stable even if i don't eat exactly 4800 mg/day?

Probably: It's unusual to have a potassium that low strictly on a dietary basis, unless you were having frequent vomiting. A balanced diet should provide adequate potassium; you should not have to obsess over eating a specific quantity.
If your potassium comes back low again, please consult a nephrologist.
