Yes: 500mg a day of vitamin c is fine. The RDA on vitamin bottles is just the amount you need to avoid scurvy or other diseases. I wouldn't go any higher than 500 though. More importantly is why are you doing this? ANy issue? Trying to avoid something or prevent something for your children?
