Loss of binocularity: The 2 eyes have to be working perfectly together to get good stereo. If 1 eye is misaligned or blurred, the stereo decreases.

Re-calibration: A vitrectomy removes some of the vitreous humor from the eye. Light goes thru this and is refracted in a particular manner. After vitrectomy, the amount of vitreous is different and your eye, optic nerve and brain have to re-calibrate the incoming light information and the response to it from the brain. Change requires time for adaptation.
