It can: If you drank oral contrast and were given contrast dye into a vein, a CT scan can demonstrate a lot of the changes you mention. Though again, there are limits to what can be indentified. Small polyps, particularly less than 1 centimeter may be difficult to visualize. And inflammation that it microscopic - as in only can be seen with a microscope - will not be visualized.
