Gum infection: I am not clear what you mean by removing your teeth but it sounds as if you have a gum infection. Please see your dentist immediately

Normal clot: As a blood clot matures the surface becomes white in color. This is normal. The white coloring is fibrin which is part of the healing process. Unless you have swelling and the white color you see is a liquid that is yellow/white in color with foul smell and taste then it is most likely not pus. If you are on antibiotics then this is unlikely also. See your dentist if you are concerned though
