Physiology: Cardiac output depends on stroke volume (the volume pumped in 1 beat) and heart rate. When dehydrated, your preload is reduced reducing stroke volume, so the heart speeds up to compensate in its attempt to maintain stable cardiac output. (IOW, if you can't pump more, pump faster).
