Ok: Probably due to the high intake of simple carbs. Try high protiene breakfast to avoid the post carb crash.

Many reasons: This could be many things from insulin imbalance to thyroid to sleep apnea and others. See your doc for a good history, physical check, and maybe some labs to start. Be healthy and well!
