Diarrhea: When red meat is not cooked properly or is kept in the refrigerated condition for a long time, the possibility of diarrhea increases manifold. Consumption of red meat that is infected with a bacterium called Escherichia coli is one of the most common causes of food poisoning. Maybe he should get a stool culture. Keep him well hydrated and if there is fever, and diarrhea continues go to the ER.
