Not big problem: Surgery should not be a problem but always inform of egg allergy. Newer immunizations for influenza are available not made from chicken embryos and can be used regardless of egg allergy. Ask your doctor about newer vaccines that are safe.

Egg anaphylaxis: For vaccines, avoid the MMR, varicella and influenza vaccines. It does not mean your son can't get them at all, should just be done under the guidance of an allergist. Nothing to worry about with anesthesia/surgery.

Egg based vaccines: most immunisations can be given and let the anasthesiologist know--they are v well prepared to handle allergic reactions in the o.r.even vaccines that were contra-indicated with egg allergies are now recommended under physician supervision--talk to your pediatrician--they would know.
