Hypoglycemia: A spike in blood glucose (from eating sugar) is followed by a spike in insulin (which moves sugar from the blood into the cells) but these insulin spikes often "overshoot" resulting in hypoglycemia. So interestingly it is the high sugar levels which CAUSE the sugar crash/hypoglycemia later. Eating paleo will actually improve hypoglycemia AND hyperglycemia giving you steady glucose levels all day
