No difference: Baby carrots are actually regular carrots which have been cut to resemble small or "baby" carrots. Carrots are a very healthy snack but the only way to get a benefit is to eat them. Therefore "baby carrots" probably win out because they are conveniently packaged and don't need skinning or trimming and people are more likely to eat them.
